  • 4 large eggs, scrambled or fried
  • ½ cup shredded cheddar or mozzarella cheese

Toppings (Choose Your Favorites):

  • ¼ cup cooked turkey bacon or chicken sausage, crumbled
  • ¼ cup diced bell peppers or spinach
  • 2 tablespoons salsa or tomato sauce
  • ½ teaspoon Italian seasoning or everything bagel seasoning

Instructions

Assemble the Pizzas:

  1. Preheat the Oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toast the Muffins: Place the split English muffins on the baking sheet and toast for 3–4 minutes, or until slightly crisp.
  3. Prepare the Eggs: Scramble or fry the eggs, seasoning them with salt and pepper.

Bake to Perfection:

  1. Layer the Ingredients: Spread a thin layer of salsa or tomato sauce on each muffin half. Top with scrambled eggs, cheese, and your choice of toppings.
  2. Bake Until Melty: Return the baking sheet to the oven and bake for 8–10 minutes, or until the cheese melts and bubbles.

Cool and Serve:
